Ingredients

  • 500g Fresh Lian Huat fresh noodles
  • 200g your choice of protein
  • 80g pre-cooked prawns
  • 2 hard boiled eggs
  • 8 cups of chicken broth or water
  • 1 can (400ml) of coconut milk
  • 4 tbsp cooking oil
  • 1 pack of Curry Laksa Paste (150g) or you use 2 tbsp oil + 3 cloves garlic + 2 shallots + 1 thumb-size ginger, 2 stalks lemongrass + 2 tsp ground coriander + 1 tsp turmeric powder + 1 tbsp curry power)

Optional Garnishes: Bean sprouts, fresh coriander, lime wedges

Method

Heat 4 tablespoons of oil in a pot over medium heat. Add the Laksa Paste over medium heat. Add the Laksa Paste and stir for 2-3 minutes until fragrant.

Add your choice of protein and stir-fry for 5 minutes until partially cooked.

Pour in chicken broth or water and bring to boil. Reduce heat. Add coconut milk and boil thoroughly and remove from heat.

Portion the blanched Lian Huat fresh noodles.

Pour hot laksa soup over and serve immediately.
