Ingredients

  • 500g Lian Huat Fresh Yellow Noodles
  • 250g chicken breast or thigh, sliced thinly
  • 2 tbsp cooking oil
  • 2 tsp of crushed garlic
  • 1 small onion, sliced
  • 1 medium carrot, sliced into thin matchsticks
  • 1 red capsicum, sliced
  • 1 small bunch bok choy, chopped
  • 2 spring onions, chopped (for garnish)

Sauce Mix:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sesame oil
  • ½ tsp sugar
  • 3 tbsp chicken stock or water

Method

Cook the noodles: Blanch Lian Huat Fresh Yellow Noodles in boiling water for 1–2 minutes. Drain and set aside.

Cook the chicken: Heat 1 tbsp oil in a large frying pan or wok. Stir-fry chicken until golden and cooked through. Remove and set aside.

Stir-fry veggies: Add remaining oil to the same pan. Sauté garlic and onion until fragrant, then add carrot, capsicum, and bok choy. Cook for 3–4 minutes until tender but still crisp.

Combine: Add noodles, chicken, and sauce mix. Toss everything together over high heat until noodles are glossy and evenly coated.

Serve hot: Sprinkle spring onions on top and bring the pan straight to the table for an easy family meal.
