Ingredients

  • 4 tbsp Cooking oil
  • 50g Shallots, peeled and chopped
  • 3 Garlic cloves, chopped
  • 100g Pork/Chicken, thinly sliced and mix with 1 tbsp cornstarch
  • 150g Peeled Prawns or Squid (cleaned, sliced)
  • 200g Choy sum, cut into finger lengths
  • 200g Bean sprouts
  • 1½ tsp salt
  • 1 tbsp Oyster sauce
  • 1 tbsp Black soy sauce
  • 2 tbsp Light soy sauce
  • 150ml Chicken stock
  • ½ tsp Black pepper
  • 500g Fresh noodles

Method

Heat oil in the wok and fry shallot until light golden brown before adding garlic and fry both till fragrant.

Next add meat, prawn and choy sum for a fast stir-fry. Then add the fresh noodles and stir fry for 3 minutes, before adding the salt, sauces, black pepper and chicken stock for another 3 minutes to simmer.

Finally add bean sprout for a 1- minutes fast stir-fry and mix well with the noodles.  Remove and serve immediately.
