Step 1: Make Your Dumpling Filling

You can use almost any combination of ingredients — meat, seafood, or vegetables. Here’s a simple pork and chive filling to get you started:

Pork & Chive Filling:

  • 300g minced pork
  • 1 cup chopped chives or spring onions
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp grated ginger
  • 1 tsp sugar
  • Pinch of salt & pepper

Mix everything together in a bowl until well combined.

Step 2: Wrap Your Dumplings

Place a Lian Huat dumpling pastry on your palm.

Add 1–2 teaspoons of filling to the centre.

Dip your finger in water and moisten the edge of the pastry.

Fold the wrapper in half and press the edges firmly to seal.

For a prettier look, pleat one side of the wrapper as you seal.

Tip: Work in batches and cover finished dumplings with a damp cloth to stop them from drying out.

Step 3: Cook Your Dumplings

Boiled Dumplings (Shuǐjiǎo)

  • Bring a pot of water to a rolling boil.
  • Drop in dumplings and stir gently so they don’t stick.
  • When the water boils again, add ½ cup cold water. Repeat twice.
  • Dumplings are ready when they float and the filling is cooked through.

Pan-Fried Dumplings (Guōtiē)

  • Heat 1–2 tbsp oil in a non-stick pan over medium heat.
  • Place dumplings flat-side down and fry for 2–3 minutes until golden.
  • Add ½ cup water, cover, and steam for 5–6 minutes.
  • Remove the lid and fry for another minute for extra crispiness.

Steamed Dumplings (Zhēngjiǎo)

  • Line a steamer with baking paper (pierced with holes).
  • Arrange dumplings with space between them.
  • Steam over boiling water for 8–10 minutes until cooked through.

  • Classic: soy sauce + vinegar + chilli oil
  • Fresh: soy sauce + lemon juice + chopped coriander
  • Sweet & spicy: hoisin sauce + sriracha
