Noodles are one of the simplest foods to cook — yet also one of the easiest to get wrong. Too soft, and they turn mushy. Too long in the pot, and they lose their bounce. But with a few easy tricks, you can achieve noodles that are always springy, authentic, and foolproof.
At Lian Huat, we’ve been making fresh noodles since 1992, so we know a thing or two about how to bring out the best in them. Follow these tips, and you’ll never have to worry about soggy noodles again.
1. Start with Plenty of Water
Always cook noodles in a large pot with plenty of boiling water. This gives them room to move and prevents sticking. A good rule of thumb: 800ml of water for every 100g of noodles.
2. Timing is Everything
Fresh noodles cook quickly — just 1–2 minutes is all you need for Lian Huat noodles. Keep an eye on the pot, and taste a strand to check doneness. The texture should be tender yet springy.
3. Stir Gently
Give the noodles a gentle stir right after they go in the pot. This helps separate them and ensures even cooking.
4. Drain Well (and Rinse if Needed)
For soups or cold noodle salads, rinse cooked noodles under cold water to stop them cooking further and to keep them firm. For soups, skip the rinse so the noodles can soak up the broth.
5. Pair Noodles with the Right Dish
- Stir-Fries: Keep noodles slightly firmer so they hold up under high heat. Our Lian Huat noodles are stir-ready ready – you do not need to blanch them.
- Soups: Softer noodles absorb broth beautifully.
- Cold Dishes: Rinsed fresh noodles with a sesame or peanut dressing work best.
