Made with Lian Huat Yang Chun Noodles
In Chinese New Year tradition, long uncut noodles symbolise long life and good fortune. This simple, comforting bowl highlights the natural texture of Lian Huat Yang Chun Noodles, served in a light fragrant broth with classic toppings.

Ingredients
- 500g Lian Huat Yang Chun Noodles
- 1 litre chicken stock (or vegetable stock)
- 2 slices ginger
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 bunch choy sum or bok choy
- 3–4 eggs (optional)
- Spring onions, sliced
Optional toppings: sliced chicken, mushrooms, or prawns
Method
Bring the stock to a gentle simmer with ginger and soy sauce.
Blanch greens briefly in the broth and set aside.
Cook Yang Chun noodles in boiling water for 30–60 seconds, then drain carefully without breaking them.
Divide noodles into bowls and pour hot broth over the top.
Add greens, egg or other toppings, and finish with sesame oil and spring onions.
