This simple one-pan chicken Hokkien noodle dish is a weeknight favourite. Made with Lian Huat Fresh Hokkien Noodles, tender chicken, and colourful vegetables, it comes together quickly with minimal washing up — ideal for busy family dinners.

Ingredients

  • 500g Lian Huat Fresh Hokkien Noodles
  • 300g chicken thigh or breast, sliced
  • 2 tbsp cooking oil
  • 2 tsp crushed garlic
  • 1 small onion, sliced
  • 1 red capsicum, sliced
  • 2 carrots, julienned
  • 2 cups cabbage, sliced
  • 4–5 spring onions, sliced
  • Sesame seeds (optional, to garnish)

Sauce

  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Chinese cooking wine or mirin
  • 1 tsp sugar
  • ½ tsp white pepper
  • 1 tsp sesame oil (to finish)

Method

Heat oil in a wok or large pan over high heat and stir-fry garlic and onion until fragrant.
Add chicken and stir-fry until just cooked through.

Add capsicum, carrots, and cabbage, and stir-fry for 1–2 minutes until slightly softened but still crisp.

Add Lian Huat Fresh Hokkien Noodles to the pan, followed by the sauce. Toss well to coat everything evenly.

Add spring onions, drizzle with sesame oil, and give it a final toss until heated through.

Serve hot, garnished with sesame seeds or extra spring onions if desired.
