Ingredients

  • 3 tbsp Cooking oil
  • 50g Shallots, peeled and finely chopped
  • 1 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 3 tbsp Light soy sauce
  • 2 stalks Green onions, finely chopped
  • 500g Fresh egg noodles

Method

Heat oil in a pan and fry shallot until golden brown and fragrant. Remove the oil and fried shallots to a big bowl and add the rest of the sauces and sesame oil to it.

Next bring a pot of water to the boil and blanch the noodles until tender but still al dente (about 2-3 minutes).  Drain well and stir the noodles to the big bowl of prepared dressings.  Finally add the green onions and quickly mix the noodles together.  Serve immediately.

(Optional: Serve noodles with thinly sliced roasted barbeque pork or boiled wontons).
