Creamy, savoury, and packed with rich peanut flavour, these satay chicken noodles are the perfect combination of comfort and convenience. Using chewy Lian Huat fresh noodles, this easy stir-fry comes together quickly for a delicious weeknight dinner the whole family will love.

The creamy satay sauce coats every strand of noodles beautifully, while tender chicken and fresh vegetables add colour and texture.

Ingredient

  • 500g Lian Huat Fresh Noodles
  • 250g chicken thigh or breast, sliced
  • 1 tbsp oil
  • 1 cup carrots, sliced
  • 1 capsicum, sliced
  • 2 handfuls bok choy or broccoli
  • Spring onions, sliced
  • Crushed peanuts, for garnish

Satay Sauce

  • 3 tbsp peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sweet chili sauce
  • 1 tsp sesame oil
  • 1 tsp brown sugar or honey
  • 2 tbsp crushed garlic
  • ½ cup coconut milk or water

Method

Cook Lian Huat Fresh Noodles in boiling water for 1 minute, then drain well.

In a bowl, mix together all satay sauce ingredients until smooth.

Heat oil in a large pan or wok over medium-high heat. Cook chicken until golden and fully cooked.

Add carrots and capsicum, then stir-fry for 2–3 minutes.

Add bok choy or broccoli and cook briefly until just tender.

Pour in the satay sauce and stir until heated through.

Add noodles and toss everything together until evenly coated in the creamy satay sauce.

Finish with spring onions and crushed peanuts.

Serve hot and enjoy.
