  • Salt or light soy sauce, to taste

Method

Bring stock to a gentle simmer and add chicken (if using). Cook until just done.
Cook egg noodles in boiling water for 1–2 minutes, drain, and divide into bowls.
Add greens to the broth and cook briefly until just wilted.
Pour hot broth over noodles, finish with spring onions and a drizzle of sesame oil.
Serve immediately.

Dry Egg Noodles

Ingredients

  • 500g fresh egg noodles
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1–2 eggs, fried (optional)
  • Blanched greens or stir-fried vegetables
  • Spring onions, sliced

Method

Cook egg noodles in boiling water for 1–2 minutes, drain well.
While warm, toss noodles with soy sauce, oyster sauce, and sesame oil.
Top with vegetables and a fried egg if desired.
Serve hot, with a small bowl of soup on the side if you like.
