Ingredients
- 500g Lian Huat Hokkien Noodles
- 200g prawns, shelled and deveined
- 150g pork belly, thinly sliced
- 2 tbsp of crushed garlic
- 1 small bunch choy sum, cut into 5 cm pieces
- ½ cup chicken stock
Sauce Mix:
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- ½ tsp sugar
Method
Prepare noodles: Blanch Lian Huat Hokkien Noodles in boiling water for 1–2 minutes. Drain and set aside.
Cook pork belly: Heat oil in a wok over medium-high heat. Stir-fry pork belly until golden and slightly crispy.
Add prawns & garlic: Toss in crushed garlic and prawns. Stir-fry until prawns turn pink.
Add noodles & sauce: Add noodles to the wok, pour in chicken stock and sauce mix. Stir-fry over high heat until everything is coated and glossy.
Finish with greens: Add choy sum last, cooking until just wilted.
Serve hot: Dish out and enjoy with sambal chilli and a squeeze of fresh lime.
